Vinification

The estate wanted to give new impetus to the traditional method.
Objective: Vinify a “Crémant” of great finesse and atypical for the appellation
After selecting the parcels of Chenin and Cabernet Franc, the grapes are pressed tenderly, then fermented in temperature-controlled vats. Then, the cuvée will be put in barrels for a few months to obtain secondary aromas. A few weeks later, this blend will be bottled and left for a minimum of 2 years on slats.
