Vinification

After blending the Grolleau and Cabernet Franc juices, the must ferments in vats under temperature control with indigenous yeasts from the vine. The maturing of the base wine is carried out in vats, the champagnization is made by a second fermentation in the bottle in our air-conditioned cellars. The maturing time on slats is at least 18 months before disgorging and marketing.
